Jaggery is a traditional sweetener made by evaporating sugar cane juice. Jaggery is unrefined sugar without adding any chemicals. It is softer than sugar and its color ranges from yellow to brown. Jaggery is called “Panella” is South America and “Gur” in India. Jaggery is conventionally sold either in blocks or powdered form. Jaggery has several health benefits and is used in Ayurvedic medicine. India is a leading producer of jaggery in the world. More than 70% of the total jaggery produced in the world is made in India. Brazil is another producer of jaggery.

We can subdivide jaggery into cane jaggery, palmyra jaggery, and raw cane jaggery.
